With heavy hearts, we share the news of Carol J. Kolozs Fischer’s passing. The visionary entrepreneur, founder of Grupo Rosas, and owner of Rosas & Xocolate Hotel fought a valiant battle against cancer. Seeking treatment in a U.S. hospital, he ultimately succumbed to the relentless disease.
Carol’s remarkable journey began in Mexico City, where he was born to European parents. His family’s path led them to Mármol, Sinaloa, Mexico, and later to Israel, where he lived on a kibbutz. After his Bar Mitzvah, they settled in Brooklyn, New York. Over five decades, Carol’s entrepreneurial spirit thrived as he created and nurtured diverse projects across various fields.
His proudest chapter unfolded as a paratrooper in the U.S. Army during the Vietnam War. This experience shaped his character, instilling a sense of duty and an unwavering commitment to making a positive impact.
Beyond business acumen, Carol embodied compassion and humanity. His legacy extended beyond Rosas & Xocolate—a luxurious boutique hotel, spa, and restaurant he established in Mérida, Yucatán, Mexico. Seventeen years ago, he transformed abandoned mansions into this celebrated haven.
Carol’s influence rippled further through GRUPO ROSAS, a company specializing in culinary and hospitality experiences. Concepts like Maya de Asia, Concepto Culinario, and Lagos Taverna Griega emerged under his guidance.
His dedication to Mérida was unwavering. Carol actively contributed to the city’s economic and cultural growth, serving on boards and advocating for progress. Before Mérida, he successfully managed the LOTTO brand license in the U.S. and Mexico for a quarter-century.
Carol Kolozs leaves behind cherished memories. As a loving husband to Anakarina, a devoted father to Adam and Aarica, and a proud grandfather, his impact resonates. His parents, Rozsi Fischer Adler and Arpad Kolozs, preceded him in death, as did a beloved sister and brother.
In recent months, Carol faced pancreatic cancer with courage. His final moments were lucid, the spark in his eyes undimmed.
We mourn his loss deeply and honor his legacy. A memorial in Mérida will commemorate his extraordinary life. Details will follow soon.
