2024 Annual Mole de Caderas Luncheon in Puebla: Participating restaurants, menu and cost

The president of the National Chamber of the Restaurant and Seasoned Food Industry (Canirac) in Puebla, Carlos Azomoza Alacio, presented the annual Mole de Caderas meal that will take place on October 24, in which 25 restaurants will participate.

In a press conference, he said that this event will be open to the public and will take place in a hotel located on 7 Oriente Street between 16 de Septiembre.

What will the menu be?

He specified that there will be three courses offered to diners: the first course is an Aztec salad, the main dish, the second course is Mole de Caderas and the third course is a seasonal dessert.

He also highlighted that there will be a corridor in which Puebla artisans will exhibit their products such as mezcal and Cempasúchil ice cream.

Which restaurants will participate and how much will the dish cost?
Among the restaurants that will participate are:

El Mural de los Poblanos
El Burladero
Evangelina
Custodia Restaurante
La Quinta
Patio de San Luis
Royalty
Fonda de Santiago Clara
La Lunita

As well as restaurants in the municipality of Tehuacán, among others.

The annual meal with the aforementioned menu will cost 1,500 pesos per person; however, the dish will cost 600 to 700 pesos in the restaurants that are part of the Canirac.

Likewise, he pointed out that the meal with the governor of the state, Sergio Salomón Céspedes, will be on October 10, in which the authorities of the different levels will attend, to begin one of the important times for the gastronomic sector.

“They start before, this meal with the governor and the secretary of tourism, which is held in the municipality of Tehuacán, with which the flag is given for the restaurants to sell this dish,” he emphasized.

Likewise, he explained that they hope to exceed the sale of more than 10 thousand heads of goats, which will be accompanied by drinks made from mezcal poblano, with the aim of promoting this artisanal product.

He recalled that in the 2023 edition they sold 10 thousand heads of goats, therefore, this year the goal is to exceed this figure, highlighting that the largest sale takes place in Tehuacán where many people are dedicated to the elaboration of this delicacy, because this tradition began in this place with the ritual of the sacrifice of this animal.
