Pirules Garden Kitchen, the new restaurant at Rosewood San Miguel de Allende

The Rosewood San Miguel de Allende hotel, located in this city designated by UNESCO as a World Cultural Heritage Site, presents Pirules Garden Kitchen, a new culinary concept that celebrates the diversity of Mexico’s regions and their legacy; led by Chef Odín Rocha. Pirules Garden Kitchen, a pioneer in its category within San Miguel de Allende, aspires to become a benchmark for restaurants in the region. With a strong focus on supporting local producers such as La Factoría, a dairy farm that uses genetic analysis to develop casein-free products; Traspatio, an initiative that supports local women in raising and distributing chickens; and Comepesca, an organization dedicated to promoting sustainable fishing, each dish highlights the people and companies that contribute to the community. In line with the principles of Rosewood Impacts, Rosewood Hotel Group’s strategy to generate positive impacts on communities and the planet, Pirules Garden Kitchen sources primarily local products, of which about 80% come from a radius of no more than 100 kilometers. Thus, under the guidance of Chef Odín Rocha, the menu reflects a genuine connection to San Miguel de Allende, highlighting seasonal ingredients and both ancestral and global preservation techniques, such as fermentation. In addition, it adopts a comprehensive sustainability approach, maximizing the use of each ingredient in dishes, drinks and other elements of the concept. Likewise, Chef Rocha is promoting a zero-waste philosophy with the goal of making Pirules Garden Kitchen the first completely plastic-free establishment in Latin America. “Chefs cannot change the world,” said Chef Rocha, “but we can transform kitchens in different parts of the world, and the sum of those transformations can generate a significant impact.”

Surrounded by lush vegetation and featuring a majestic pirul tree, the restaurant offers both indoor and outdoor spaces, an open-concept kitchen, a communal wooden table, and a spacious bar area. Designed by renowned studio Cuaik Arquitectos, Pirules Garden Kitchen’s aesthetic is inspired by the city’s signature energy. The space reflects Rosewood’s A Sense of Place philosophy, highlighting authentic Mexican craftsmanship and the cultural essence of the destination through its architecture, colors, materials, and furnishings. The restaurant is decorated with local materials such as slate, fired brick, reclaimed wood, custom ironwork and clay tiles, all carefully selected for their timeless quality. Key design elements pay homage to Mexican heritage, including a Huichol mirror handcrafted by a local artisan in collaboration with Casa Midy. Additionally, the space features traditional ceramics and wood pieces by renowned Mexican artist Daniel Orozco.

One of the most distinctive elements of Pirules Garden Kitchen is its oven, visible from any point in the restaurant, where 80% of the dishes are traditionally cooked with ash, wood or charcoal. Signature dishes on the menu include cured salmon trout salad from Lake Pátzcuaro, seasonal harvest barbacoa, grilled sea bass, creamy rice with Wagyu cheek, whole roasted cauliflower, among others. In addition, the restaurant will include a public market where a careful selection of local products will be offered, such as freshly cut flowers, herbs grown in the hotel’s gardens, fruits and vegetables from the region, honey and jams made on the property, as well as other artisanal items from local producers.

The introduction of this new gastronomic concept not only represents an important milestone for the city, but also celebrates the return of Chef Odín Rocha to the hotel, after his time as head chef of Mezcal at Montage Los Cabos.
