The night began with Christmas carols that impacted the atmosphere while the tree lights illuminated the hotel. However, the real peak came with dinner, prepared by two great figures of gastronomy: Gerardo Rivera, corporate chef of Grupo Posadas, and Ernesto Narváez, executive chef of Live Aqua San Miguel de Allende.

Each dish on the menu was a tribute to the Christmas spirit and the characteristic sophistication of Moët & Chandon. The starter, a delicate three-cheese gnocchi, had a perfect texture that melted on the palate, enveloping the senses in an embrace of flavors. The second course surprised with a fish in a spiced sauce, a creation that stood out for its freshness and complexity, reflecting the richness of contemporary Mexican cuisine. For the main course, duck was the star, accompanied by a sauce that took more than 12 hours to cook, achieving a perfect balance between depth and elegance. Finally, the chocolate dessert closed the night with a sweet and sophisticated touch that left everyone with the best taste in their mouths.

Although his arrival in the world of cooking was almost fortuitous, his passion for flavors and techniques led him to represent Mexico in the Cooking Olympics, reaching seventh place worldwide, the best result for our country in this prestigious competition.

Rivera has revolutionized hotel gastronomy by breaking the stigma that you cannot eat spectacular food in hotels. His strategy has been to grant operational independence to the restaurants within Grupo Posadas, allowing them to create unique concepts such as Bistral, which mixes local cuisine with a grill style; Carnivor, a steakhouse with an American essence; and Azur, which celebrates the richness of Mediterranean cuisine.
