The perfect way to enjoy Mexican cuisine with delicious dishes made with natural products is through Pirules Garden Kitchen, the new restaurant at the Rosewood San Miguel de Allende hotel, located in this emblematic city designated by UNESCO as a World Heritage Site.

At Life and Style we had the opportunity to learn about this new culinary proposal located within the renowned hotel and experience first-hand the entire experience it offers to both guests and visitors, and of course we will tell you all about it.

Surrounded by lush vegetation and with a majestic pirul tree as the protagonist, this place celebrates the diversity of the regions of our country and its legacy, all by the hand of chef Odín Rocha, who highlights that “more than a concept, Pirules Garden Kitchen is a cooking philosophy” based on creativity and technique.

And what is the reason? The answer is simple: this signature gastronomic space offers the most natural cuisine possible, with garden, seasonal and local products. In fact, nearly 80% of the ingredients used to prepare the dishes are local, from a radius of no more than 100 kilometers.

One of the missions of Pirules is to reduce the carbon footprint, so chef Odín and his team work with local products.

“At Pirules before thinking about the recipe, we think about the product (…) chefs cannot change the “We can transform the world, but we can transform the world’s cuisines to generate a significant impact,” Odín shares.

Among the signature dishes on the menu are the cured salmon trout salad from Lake Pátzcuaro, canned sardines, seasonal harvest barbecue, grilled sea bass, pork belly, creamy Wagyu cheek rice, and roasted cauliflower.

The restaurant offers both indoor and outdoor spaces, an open-concept kitchen, and a large bar area with privileged views of the San Miguel Arcángel Parish.

The mixology of the place is in charge of the Brazilian bartender Ana Paula Ulrich, who together with her team will give you a warm welcome through a variety of fresh cocktails ideal to enjoy alone or with your favorite people.

Our bar recommendation: the Lavanda cocktail, low in alcohol prepared with vodka, Galliano l’Autentico liqueur, papaya, lavender cordial, and mineral water.

But that’s not all, Pirules Garden Kitchen will include a public market to offer a selection of local products such as freshly cut flowers, herbs grown in the Rosewood San Miguel de Allende gardens, regional fruits and vegetables, honey and jams made on the property, as well as other artisanal items that guests, locals and tourists alike cannot miss.
