To ‘stay alive’, Mazatlán restaurants are reinventing themselves, but how do they do it?

Faced with the decline in sales, Mazatlán restaurants have had to reinvent themselves to stay afloat in this crisis that they have been experiencing for four months as a side effect of the violence.

The president of the Mazatlán Gastronomic Council, Roberto Osuna Valdez, said that many businesses, as in the pandemic, implement “home delivery” and “take-out” services.

He commented that although January is a month of low sales, they fluctuate around 30 percent, which makes the operation of businesses very complicated.

“The restaurant sector is always reinventing itself, we do not give up, we continue to pay taxes and we are trying to fire people as little as possible, because this can become a social problem,” he said.

Osuna Valdez mentioned that among the members they promote local consumption to prevent businesses from closing their doors.

“Those who did not open in the morning are now selling breakfast, those who did not open midday are selling food to avoid closing the curtains,” he insisted.

He pointed out that Conagam currently has more than 40 restaurants and generates around 3 thousand direct and indirect jobs.

In addition, he added that surprisingly in the rural area they reported a 10 percent increase in their sales, even surpassing the levels recorded during the Sundays of December.

He explained that possibly the cool weather motivated many people in the region to enjoy the delicacies of the rural area, such as coffee and sweet bread, turning the weekend into an opportunity to socialize and enjoy the tranquility of the environment.
