Pizza, the quintessential Italian dish, takes over a new space in Mexico City: Liona. This restaurant has adopted sourdough as a distinctive seal in its preparations.

What to eat at the Liona restaurant?
From the moment you set foot in the entrance, the intimate atmosphere of the Liona restaurant invites you to taste a sourdough pizza finished with Sicilian extra virgin olive oil and Maldon salt.
It is a small space, but with enough capacity to transport you to Italy through the aroma that comes from its kitchen. The pizzas are prepared in the oven and with fresh ingredients, from the dough to the herbs and cheese that are added.
The dough is fermented for 48 hours, which fragments the gluten chains and makes them easier to digest. So, in addition to eating delicious food, the nutritional contribution of each slice is taken care of.
They have 10 basic flavors: Napolitana (San Marzano tomato, Italian garlic, anchovies, smoked capers, olives and dried oregano), Bianca (young Asiago, Gorgonzola Dolce, Fior di latte, Crottin and basil), Salami (San Marzano tomato, Fior di latte and spicy salami), among others.
However, periodically, they launch culinary collaborations to create unique menus. Recently, Chef Lucho Martínez entered the Liona kitchen with the intention of offering an evening of exceptional flavors… and he succeeded.
The native of Veracruz prepared 3 pizzas with his personal touch: Lucho Roja (San Marzano tomato, chintextle and guanciale), Lucho Blanca (grilled Port Bechamel, date and stracciatella) and Freestyle (with improvised ingredients).
This and subsequent Liona takeovers aim to create a “cooking with friends” atmosphere, say founders Andreina Matos and Leo Labartino. “The intention behind this is to create a community, celebrate the friendship that exists (with the chefs) and play with that,” they say.
Amidst the candlelight, the aroma of the pizza merges with the effervescence of the drinks, which include white, orange or red wine, Sicilian spritz, Lambrusco spritz, Paloma de Palermo, Negroni bianco and more.
Another must-try dish is the squash blossoms in tempura, served with scamorza affumicata, anchovies, lemon and fermented chile manzano mayonnaise. They also have salads and, for dessert, tiramisu.
Where is Liona pizzeria?
Liona is located in the Juárez neighborhood a few steps from the Italian restaurant Darosa, its “sister.” To attend the takeovers, it is not necessary to pay an additional cost, since the experience is included in the consumption of the menu.
It opens on Mondays, Wednesdays, Thursdays, Fridays and Saturdays from 6:00 p.m. to 8:15 p.m.; while on Sundays they offer service from 2:00 p.m. to 5:45 p.m. For greater convenience, it is recommended to make a reservation on their website.
