More than 100 local flavors at the San Cristóbal Gastronomic Festival

As part of the 155th annual Spring and Peace Fair 2025, the traditional Gastronomic Showcase will be held this Saturday in San Cristóbal de Las Casas, an event that highlights the region’s culinary richness.

The event will take place in the atrium of the Hermanos Domínguez City Theater, where more than 100 participants, both men and women, will present a wide variety of typical dishes prepared by San Cristóbal de Las Casas residents. The event will begin before noon and is expected to conclude around 7:00 PM.

Organized by the municipal DIF system, the event seeks to preserve and promote traditional Coleta cuisine, offering locals and visitors a unique gastronomic experience. Among the dishes on offer are traditional lomo, Spanish lomo, butifarra (sausage), pickled pork feet, shredded leg, baked chamorro (sausage), mole, tacos, chile relleno (stuffed pepper), pollo a la Reyna (queen-style chicken), as well as traditional sweets and eggnog.

As an incentive for participation, prizes will be awarded to the three best dishes, judged on their flavor, presentation, and authenticity. The gastronomic showcase is one of the most anticipated activities of the fair and represents an opportunity to strengthen cultural identity and create family gatherings around traditional food.
