Guanajuato’s gastronomy will gain significant national and international exposure as the state participates as Guest of Honor at the 2026 Sabor es Polanco festival, considered the most important gourmet event in Latin America. The event will take place from March 13 to 15, 2026, at the iconic Campo Marte venue in Mexico City.
Guanajuato’s participation is being spearheaded by the Ministry of Tourism and Identity of the People’s Government (SECTURI) and a strategic vision of Governor Libia Dennise, with the goal of strengthening the state’s position as a high-level gastronomic destination, highlighting its traditional cuisine, its contemporary culinary evolution, and the growth of its wine and spirits industry.
Since its inception more than a decade ago, Sabor es Polanco has established itself as one of the most important gastronomic events in Mexico and Latin America. For over twelve years, the festival has brought together renowned chefs, high-end restaurants, gourmet producers, and food lovers in a space where flavors, culinary experiences, and innovative offerings converge.
The event has seen sustained growth in attendance, reaching over 12,000 visitors per edition, with sold-out shows in recent years. Its audience—culinary experts and critics, winemakers, and lovers of traditional and contemporary cuisine—makes it a strategic showcase for tourist destinations and premium gastronomic products.
The 2026 edition will feature more than 85 high-end restaurants from Mexico City and various regions of the country, as well as unlimited tastings of wines, beers, spirits, and gourmet products, specialized tastings, immersive experiences, live music, and networking opportunities for leaders in the gastronomic sector.
Guanajuato’s participation as the guest state aims to solidify its position as a national leader in gastronomy and wine tourism, highlighting the richness of its traditional cuisine, the talent of its chefs, and the quality of its regional products.
The state will be represented by restaurants and culinary specialists who reflect Guanajuato’s gastronomic diversity, from community-based cuisine to contemporary offerings.
Among the representatives of traditional cuisine are traditional cooks Dora Isela Castro Andrade, from Celaya, who will present a tasting of traditional gorditas; and Elizabeth Jaralillo Cofradías, from Comonfort, who will share the preparation of ceremonial tortillas, traditional dishes, and a workshop on salsas made in a molcajete (mortar and pestle). Their presence represents the living culinary heritage of Guanajuato’s communities.
The contemporary culinary offering will be presented by chef Raymundo Gutiérrez, with projects in Dolores Hidalgo and San Miguel de Allende. He will showcase a cuisine that reinterprets local ingredients using modern techniques, highlighting the state’s gastronomic evolution.
One of the cornerstones of Guanajuato’s participation will be the promotion of its growing wine industry. During the festival, wine tastings will be held featuring wines from the state’s main wine-producing regions, including San Miguel de Allende, Dolores Hidalgo, Comonfort, San Felipe, and León.
A wide variety of spirits and artisanal beverages from the state will also be featured, including mezcals from San Luis de la Paz, products from the Women Mezcal Producers Association, as well as iconic labels such as Tequila Corralejo and Casa Dragones, in addition to local craft beers.
At the Guanajuato booth, visitors will be offered experiences including sensory wine tastings, tequila tastings, craft beer and mezcal with endemic ingredients, as well as traditional culinary workshops.
The 2026 edition of Sabor es Polanco will also feature Argentina as the guest country, sharing the prelude with our state, thus expanding the festival’s international reach and strategically positioning Guanajuato to attract visitors.
Guanajuato’s participation in this festival represents a strategic platform to showcase its culinary richness to media outlets, gastronomic leaders, buyers, and potential travelers, reinforcing its position as a destination that combines tradition, identity, wine, spirits, and contemporary haute cuisine.
