A New Boutique Hotel in Todos Santos Brings Bygone Charm to Mexico’s Baja California Sur

As I walk along the lavish marble hallway of Todos Santos Boutique Hotel, I catch a glimpse of the sun’s orange rays fading through the renovated brick arches that lead to the outdoors, where tall palms cast their shadows over the warm pool. I snap a few photos (and imagine how it would feel to be a rich heiress in another life), before reaching the lobby. The hostess tells me they are waiting for me, and takes me down some stairs to a secret room: an oak-wood wine cellar with about 240 wines from Mexico and beyond.

There, I meet Cesár Caro, a sommelier from Los Mochis on the Sinaloa coast with more than 15 years of experience; he has been part of the openings of the best hospitality projects in Baja California Sur, from Costa Palmas in East Cape to Chileno Bay in Cabo San Lucas. For the next hour, he shows me the best wines that Mexico has to offer. There’s a fruity sauvignon blanc made by Bruma in Valle de Guadalupe, a rosé from the rural area of San Miguel de Allende, and my favorite: a smooth red blend by Megacero from Chihuahua, a region I didn’t know made wine.
