The world’s most expensive taco is in Los Cabos and costs $25,000: What ingredients does it contain?

One of the most typical and traditional dishes on Mexican tables is undoubtedly the taco. It’s a dish characterized by its versatility: the tortilla can be made with corn or wheat flour, while its contents can be a stew as varied as various meats or legumes.

Of course, special and unique toppings like salsas or lemon are essential. The preparation method depends on the region of the country and its traditions. Even the recipe (with ingredients that may or may not be from the region) and the personal touch added by the cooks and chefs depend greatly on it.

The most expensive taco in the world is served at the Grand Velas Los Cabos resort in Cabo San Lucas, Baja California Sur. It costs $25,000, equivalent to about $475,000 pesos in Mexico. Its creator is Juan Licerio Alcalá, the executive chef of the aforementioned resort.

The gastronomy specialist has extensive experience in Middle Eastern, French, Spanish, Indian, American, Spanish, and, of course, Mexican cuisines. The dish was first served in 2017, and despite its high price tag, it was well received and received several reservations.

What are its ingredients?

On the menu in the resort’s restaurant area, it can be found listed as “Frida”; according to Juan Licerio Alcalá, it inspires a tribute to the artist Frida Kahlo. Several ingredients are included in this dish, including lobster, black and white truffles, and Brie cheese.

It also includes Kobe beef and Almas Beluga caviar, served on a corn tortilla infused with gold flakes. The chef suggests pairing this dish with a sauce of dried morita chiles, .925 tequila, and civet coffee. These ingredients are not easy to obtain; their production relies on specialized techniques.

Specialized Techniques for Obtaining It

Kobe beef is a highly prized protein obtained from Wagyu cattle; it is raised under very strict quality standards in Hyogo Prefecture, Japan. It is world-renowned for its high degree of marbling, its tenderness, and its delicate, intense flavor.

Almas Beluga caviar is one of the most exclusive and expensive types of food of its kind in the world; it comes from a species of sturgeon known as beluga. It is especially distinguished by its light-colored roe, which can vary in shades from light yellow to completely white.

The chef stated that he sought to go beyond traditional cuisine and surprise guests, who in many cases have traveled halfway around the world.

Brie cheese is originally from France and is known for its edible rind of white mold (usually PEnicillium camemberti), which gives it a mild flavor and special texture, while also having a slightly acidic taste. The black truffle is a variety of mushroom with a unique flavor and intense aroma. It grows underground in symbiosis with oak and hazelnut species.

Meticulous care increases its production cost.

Collecting this special truffle is not easy: it requires training animals so that their specialized sense of smell can detect and “harvest” it. Regarding suggested drinks, .925 tequila is a high-quality distillate whose bottle costs up to $150,000 (2.8 million pesos).

Civet coffee is native to Indonesia. Its production method is unique: the coffee beans are consumed by a small, cat-like mammal called a civet; it then excretes the beans, which are then collected, cleaned, and processed to make coffee.
