There are restaurants that serve food, and there are restaurants that tell a story. La Bóveda by Casona Sforza, located in Puerto Escondido, Oaxaca, falls into the latter category, and it has a Michelin Guide to prove it.
Its concept is as simple as it is ambitious: to cook honestly, using what the region has to offer.
The menu is inspired by the surrounding environment, featuring seasonal ingredients, local suppliers, and farms and harvests near the Oaxacan coast. No unnecessary imports or trendy gimmicks.
Here, the product reigns supreme, and what arrives on the plate tastes exactly like what it is (or even better). They describe it themselves: “Cuisine based on the product, prepared like at home, with seasonal ingredients from the region or local suppliers.”
The menu plays with an idea that sounds like a contradiction, but on the plate, it makes perfect sense: everyday recipes executed with French techniques. The result is a tortilla with hoja santa and quesillo to start the day, or the catch of the day with mussels, fresh pasta, and a garden salad to end it. Familiar fare, elevated with precision.
For dessert, pastry chef Vanessa Franco creates seasonal fruits, homemade ice creams, and Tabasco chocolate, which are reason enough to make a reservation. The menu also includes vegan and keto options, without sacrificing an ounce of pleasure.
