“Hidden” among the streets of the city center is Antojitos Mexicanos Esther, a restaurant with more than 60 years of history that has been passed down from generation to generation, even winning over the grandchildren of its first customers.

Famous for its gorditas, tlacoyos, sopes, and quesadillas, this place has an extra touch that for years has piqued the curiosity of thousands: its enigmatic “red” salsa—which, in reality, isn’t entirely red.

Over time, many have mistaken it for a pasilla or guajillo salsa, but its recipe remains a well-kept secret.

In fact, the content creator En mi barrio se come chingón (The food in my neighborhood is amazing) visited the restaurant and interviewed Doña Esther’s daughter and grandson to understand why people keep coming back. The answer was clear: the service, the quality of the masa (corn dough), and, of course, their salsas—including the famous secret recipe.

The video sparked all sorts of theories. Some users claim it might contain chile pulla, chile de árbol, morita, and tomatillos, although nothing is confirmed.

It’s best to go with plenty of time and not too hungry. The restaurant’s popularity means there’s almost always a line, and the wait can be long.

As for the flavor, the secret salsa is well-balanced: spicy, but not overpowering. If you prefer intense heat, the recommendation is to go straight for the salsa verde.
