The Hotel Real de Chapala, part of the Autonomous University of Guadalajara (UAG), has joined the list of establishments certified with the H Distinction, having received this recognition for its Azulejos restaurant.
This distinction is awarded to the establishment for its good hygiene practices and safe food handling.
The awarding of the distinction, granted by the Ministry of Tourism of the Government of Mexico (SECTUR) and endorsed by the Ministry of Health, marks a significant step in strengthening the tourism offerings of the Chapala Riviera, guaranteeing national and international visitors services aligned with high sanitary standards.
During the ceremony, authorities and representatives of the sector agreed that this achievement not only enhances the competitiveness of the destination but also reflects a sustained commitment to continuous improvement in the hotel industry.
What is the H Distinction?
Since 1990, the Ministry of Tourism has promoted a culture of quality, hygiene, and safety in the preparation of food and beverages in hotels, restaurants, and other tourist establishments.
The “H” Distinction emerged as a strategy to prevent foodborne illnesses and strengthen visitor confidence.
This recognition is awarded only to establishments that comply with the guidelines established in the NMX-F-605-NORMEX-2018 Standard.
Among the aspects evaluated are the proper receipt and storage of supplies, temperature control, handling of chemical substances, kitchen hygiene, pest control, waste management, and ongoing staff training.
The Chapala Tourism Delegate, Patricia García Martínez, acknowledged the hotel team’s efforts and highlighted the positive impact of this achievement on the region.
“This is a great achievement that brings prestige to the Chapala Lakeside. This distinction strengthens its tourism positioning and demonstrates a commitment to quality,” she stated.
She also noted that this type of certification is key to consolidating competitive and reliable destinations.
On behalf of the Autonomous University of Guadalajara (UAG), Judith Jocelyn Cervantes Navarro, Manager of Productive Services, explained that the certification is the result of a comprehensive process involving both operational and cultural changes.
“It is a seal of guarantee that provides security for guests because it prevents foodborne illnesses and ensures high standards in food preparation,” she stated.
She detailed that the process begins with a technical assessment of facilities, equipment, and processes, followed by an implementation phase that includes training, adjustments, and control of critical control points.
Subsequently, the certifying company, Smarth Inspection & Certification, conducted a thorough on-site audit.
“Everything is reviewed: from the receipt of raw materials to the staff’s practices. Logs and evidence demonstrating consistent process adherence are also verified,” she explained.
She added that the hotel successfully met all the critical points of the standard.
“In this case, there were no non-compliance points, which guarantees food safety at all times.”
Jorge Arturo Rangel Samayoa, General Manager of Hoteles Chapala, acknowledged the work of all the departments involved in obtaining the distinction.
“This recognition belongs to everyone: kitchen, maintenance, human resources, administration. Each department has been fundamental in making it possible,” he stated.
He also emphasized the staff’s responsibility in food handling.
“Food handling must be approached with the seriousness of someone who holds the health of others in their hands,” he concluded.

The official presentation of the H Distinction marked the highlight of the event, which was enthusiastically celebrated by authorities and staff.
