At the presentation of the activities of Guelaguetza 2024, chef Andrea Sánchez, state president of the National Chamber of the Restaurant and Seasoned Food Industry (Canirac), announced the details of the long-awaited Festival of Moles.
This event, which has established itself as one of the main tourist and gastronomic attractions of Oaxaca, celebrates the diversity and richness of Oaxacan cuisine, known for its complexity and its ability to preserve ancestral traditions.

And the fact is that Oaxacan gastronomy, rich in flavors and techniques, is one of the most important cultural manifestations of the state.
«Oaxacan gastronomy is one of the cultural manifestations that identify and define us as a people,» said Sánchez.
Within the framework of Guelaguetza, the largest festival in Oaxaca, the Festival of Moles is positioned as an unmissable event, attracting both locals and tourists from all over the world.
The success of the festival is the result of the collaboration between entrepreneurs, cooks, chefs and the Oaxaca Tourism Secretariat. The president of Canirac highlighted the importance of these alliances to promote and encourage Oaxacan cuisine.

“This gastronomic project allows us to promote and enrich the tourist offer,” said Sánchez, emphasizing how gastronomy is not only a cultural expression, but also a driving force for the economic development of the state.
This year, the Festival of Moles will feature the participation of 30 restaurants affiliated with Canirac, offering 28 different types of moles from the various regions of Oaxaca. Among the most emblematic moles are the black mole, the yellow mole and the green mole.

In addition, the festival will present lesser-known but equally delicious varieties, such as the Castilla banana mole, the red Mixtec pipián, and the bride stew. Accompanying these dishes there will be a wide range of traditional drinks, such as mezcal, fresh water, craft beers, and the traditional tejate.
The festival activities will take place at the Oaxaca gastronomic center, located in García Vigil. On July 25, the event will begin with a discussion of chefs in the auditorium of the Universidad Tecnológica de los Valles Centrales de Oaxaca.

On July 25 and 26, the gastronomic show will be held on the terrace of the gastronomic center, where attendees will be able to taste the various moles and other Oaxacan delicacies from 2:00 p.m. to 6:00 p.m.
The Festival of Moles also extends to the participating restaurants, which starting July 20 will offer the moles presented during the event on their menus. This initiative allows visitors to enjoy Oaxacan gastronomy in different settings, promoting the culinary richness of the state.
Sánchez thanked the sponsors, including Ford, Aragón, Coca-Cola, Heineken, and several mezcal brands, for their support of the festival. She especially highlighted the collaboration with the Ministry of Tourism, which supports this event year after year, consolidating it as an essential tradition of the Guelaguetza.

The 2024 Moles Festival promises to be a vibrant celebration of Oaxacan culture and gastronomy. The invitation is open to all to enjoy an event that not only offers a feast of flavors, but also an immersion in the traditions and identity of a people.
As Chef Andrea Sánchez stated, “We are ready to welcome you,” inviting everyone to participate and enjoy this unique experience that unites tradition, flavor and community in the heart of Oaxaca.
