The ‘Los Rosales’ Ice Cream Shop is an iconic establishment that has transcended generations, preserving its traditional recipes and delighting the Guanajuato community with its delicious ice creams, milkshakes and homemade food. From its humble beginnings on the streets of Guanajuato, this ice cream shop has earned a special place in the hearts of the inhabitants, becoming a symbol of tradition and flavor.

It all began with the ice cream cart of Don Juanito, grandfather of the current owners. Marco Antonio Ramírez Regalado, grandson of the founder, told Periódico Correo how the business began.

“Look, the one who promoted the Rosales ice cream was my grandfather Don Juanito. My grandfather Don Juanito sold ice cream from a cart, he had his cart and he sold in the arches of the municipal presidency” where in those days there was a bus stop and therefore there was a great influx of people. “So the snow would be made here at the Company in a small room that was rented, and the snow would be sold in the arches of the municipal presidency.”

For people around 30 years old and older generations, Lonchería y Nevería ‘Los Rosales’ was a place that was marked by the taste of its delicious snow made from natural products, its traditional food, the characteristic business with ‘crooked bottles’ that adorned some shelves, and its delicious milkshakes. According to Carlos Alberto Ramírez Regalado, grandson of the founder and part of the third generation of the business, the business began to grow and it was decided to establish itself.

“Yes, with the demand, as the uncles say, the demand for the snow began to grow (…) there was a need to rent a place and with the support of the people, the taste of the people towards their product, that was how they managed to rent it in order to be able to go out.”

The ice cream shop was located right in front of the Temple of the Company, where today it is a hotel. It was common for people who went to mass, or on holidays like the Friday of Sorrows and during Holy Week, to come to this place.

“We remember that where there is a hotel right now, was the first Nevería Rosales and that it was the one that lasted for several years. We are talking about about 40 and some years there,” remembers Carlos Alberto.

Both remember their grandmother having a large table in a cart in this place where she prepared traditional dishes like red enchiladas, red pozole with head, golden tacos, flautas, therefore, it was named Lonchería and Nevería ‘Los Rosales’.

Today, the Nevería ‘Los Rosales’ has transcended and is located in the Colonia Santa Fe, right in front of the public transport stop at Técnica 34. According to Carlos Alberto Ramírez Regalado.

“The legacy of the ice cream shop and the traditional preparation was passed down among our uncles and my father, as well as cousins, and now our children and nephews. We continue to maintain the original recipes and the quality of the ingredients, because that is what makes us proud and defines Los Rosales,” clarifying that everything is one hundred percent natural and under the traditional preparation, which could be said to be the secret of the flavor of their delicious ice creams and milkshakes.

For his part, Marco Antonio Ramírez Regalado, also grandson of the founder, adds:

“Our grandparents and parents instilled in us the love for this business and the importance of preserving the essence of ‘Los Rosales’. Today, we see how our children and nephews get involved with the same passion, ensuring that this tradition remains alive for many more generations.”

Both brothers mention that they have seen the possibility of returning to the city center. However, the increase in rents, which led to the closure of the premises opposite the company’s temple, and the need for permits, have been an important factor in preventing this from taking place.

The ‘Los Rosales’ Ice Cream Shop has become a symbol of the community, a place where family and friends gather to enjoy traditional flavors that have been carefully preserved over time. With each generation, the passion and commitment to keep this iconic ice cream shop alive grows stronger, ensuring that its legacy continues to delight the palates of future generations:

“We want tradition not to fall, we want tradition to come to Los Rosales by snow,” says Marco Antonio Ramírez Regalado.

The brothers say they are proud to belong to a family with a great tradition in this business, and they also mentioned that their uncles opened their own ice cream shops seeking to preserve the family legacy. Today the ice cream shop in Colonia Santa Fe is the only one left under the name of ‘Los Rosales’. However, they say they are proud to continue moving forward and that their uncles and family also wanted to preserve it, but above all that someone up there in heaven sees them work with great responsibility and passion.

“And my grandparents, who are doing it ourselves, who are their grandchildren.”

Today, Nevería ‘Los Rosales’ remains a must-visit destination for those seeking to enjoy the flavors that have captivated the community for decades. With their unwavering commitment to keeping the recipe and essence of this family business alive, the heirs of the third generation ensure that the tradition of ‘Los Rosales’ will continue to delight generations to come.
