At Oso Restaurante, the culinary narrative finds a natural echo in the richness of Baja California Sur, where the sea and the desert converse, both in the restaurant’s location and in the ingredients of its dishes.

Oso Restaurante feels like a contemporary extension of the Baja Californian spirit: a cuisine that honors its origins but translates them into a refined, intimate, and profoundly sensory language.
Under the direction of Chef Alejandro Villagomez, who also oversees other culinary ventures in La Paz such as Quemadero, Azotea, and Nemi, Oso’s menu is built around the immediacy of the product: fresh fish and seasonal ingredients.
“I would define Oso’s cuisine as a very personal comfort food. It’s a collection of dishes born from taste, memory, and intuition, rather than from a rigid formula or a single tradition,” he explains.
The menu is creative, with beautifully presented portions and a relaxed fine dining style. The dishes are prepared using techniques influenced by modern Mediterranean and European cuisine—incorporating elements such as burrata, gravlax, and tartare—but with contemporary touches and seafood as the main ingredients, including scallops, mussels, salmon trout, mackerel, and tuna.
Regarding this, he adds, “There’s a clear foundation of European and Mediterranean inspiration, but it’s always reinterpreted within our context: Baja California Sur. This gives the cuisine a strong presence of local products, Mexican flavors, and a creative freedom that allows us to avoid being pigeonholed.”
Each dish is served in the center of the table or at the small bars that blend into the restaurant’s intimate atmosphere, offering the opportunity to share the different dips and appetizers. Here, you eat at a slow pace, like the very ambiance that characterizes the streets of La Paz.

“We use oysters and fresh fish from the region, as well as organic vegetables from areas like El Pescadero and Miraflores: carrots, beets, aromatic leaves, among others. We also incorporate ingredients that are very representative of the area, such as damiana, an endemic herb that allows us to connect the cuisine with the land in a more authentic and distinctive way,” explains Alejandro Villagomez.
On first-time visitors, the Chef recommends trying the MezcalOso, a cocktail with Espadín mezcal infused with honeycomb and citrus, which reflects the establishment’s character; it’s served in a crystal glass with crushed ice. He also suggests trying the Negronis, which take center stage at the bar.
The restaurant also offers classic options like Martini, Aperol Spritz, Old Fashioned, and Manhattan. Vermouth also holds a special place on the menu, starring in cocktails like the Cocchi, Antica Fórmula, Punt e Mes, and Barolo Chinato.
For food, the Chef highlights the beef tartare with smoked oysters, which combines intensity and freshness; the beef sweetbreads with aligot and chimichurri, a very comforting and rich dish; and for dessert, the MelOso, a honey sponge cake with lemon cream and damiana because it “closes the experience with a very clear nod to the region.”
Although the menu doesn’t change constantly, some dishes do have variations, such as the pasta of the day. Other options for snacking include LatOsos (tapas-style appetizers with sourdough bread), arugula salad, fried eggplant, braised beef, and more.

Oso Restaurant is a place with a clear identity: contemporary cuisine focused on product and aesthetics; primarily, it prioritizes a sensory experience over the traditional, and this is evident in both the presentation of the dishes and cocktails and the restaurant’s decor.
“It was born inspired by European bistros, small, intimate spaces with a lot of personality, where the important thing is a close and unpretentious experience. From the beginning, we wanted to create a place where people could come to have a glass of wine and a bite to eat, or to enjoy a full dinner,” the Chef explains when asked about the inspiration behind the project.
Everything—from the dishes to the lighting and the presentation—is designed to look appealing, but especially to create a connection between the kitchen and the diner, generating an open, honest, and vibrant dynamic.
And he adds, “From the scale of the place, the close relationship with the team, the way the food is served and cooked, to the selection of dishes, everything is designed to be honest and consistent. This creates a distinct experience within the city—more intimate, more relaxed, and very focused on enjoyment.”
