Imagining a taco without a tortilla seems impossible, but today, the very soul of this traditional dish is putting taco stands in Tuxtla Gutiérrez in a difficult position. Faced with the recent two-peso-per-kilo increase in the price of tortillas, local vendors have opted for a “silent sacrifice”: absorbing the extra cost instead of passing it on to the consumer. For entrepreneurs like Citlaly Martínez Juárez, whose “Mexico City-style tacos” depend on yellow tortillas, the message is clear: hold on. Even though profits are becoming as thin as the product itself, the sector prefers to keep its prices fixed at 20 pesos to maintain customer loyalty, hoping that the price of corn will soon ease.
