The Hidalgo-style barbecue is in the top 10 of the best in the world

The Hidalgo-style barbecue, a dish that is prepared with lamb meat cooked in a pit oven, has been recognized as one of the best in the world by the prestigious magazine Travel + Leisure.

The publication, which specializes in tourism and gastronomy, published a list of the 10 best barbecues in the world, based on the opinions of experts, chefs, and travelers.

The Hidalgo-style barbecue ranked seventh, above other famous styles such as the Argentinean, the Korean, and the Texan.

According to the magazine, the Hidalgo-style barbecue stands out for its “tender and juicy” meat, which is seasoned with salt, garlic, and cumin, and wrapped in maguey leaves before being buried in a pit with hot coals.

The magazine also highlights the traditional accompaniments of the dish, such as the consommé, the salsa verde, the tortillas, and the pulque, a fermented drink made from the sap of the maguey.

The Hidalgo-style barbecue is a dish that dates back to the colonial era, when the Spaniards introduced sheep to the region. It is usually prepared for special occasions, such as weddings, baptisms, and festivals.

The magazine’s list of the best barbecues in the world is topped by the American-style barbecue, followed by the Turkish, the Brazilian, the South African, the Australian, and the Japanese. The Hidalgo-style barbecue is the only Mexican representative on the list.
