The Potosí-style enchilada, a culinary symbol of Soledad’s identity, will be the star of the Enchilada Gastronomic Contest, which will award 18,000 pesos in cash prizes to the most innovative entries. This will take place during the 2026 National Enchilada Fair in Soledad.

Dishes such as enchilabirrias, aguachile with enchiladas, and enchilada cream will showcase the culinary creativity that seeks to elevate this emblematic dish. The contest will be the highlight of an event that grows stronger each year, establishing itself as the favorite gastronomic event, according to Felipe Cárdenas Quibrera, Director of Culture and Tourism for the municipality of Soledad, which is celebrating its anniversary today.

The judging panel for this competition will be comprised of top-level specialists such as Taurino Galván, from the renowned Rincón Huasteco restaurant; sommelier Gabriel Hernández Acevedo, from Viñedo Pozo de Luna, winner at the Brussels World Competition; and chef Pedro Raziel Enríquez, with experience in chains such as Grupo Mundo Imperial, Conrad, and Hilton, and currently responsible for the nutrition of the Atlético de San Luis team.

The National Enchilada Fair will also be a space for social gathering and participation. A Tourism and Culture booth will be set up to serve local, national, and international visitors, where tourist passports will be distributed in the Artisan Pavilion, in addition to folk dance performances “that will bring our roots to life.”

Cárdenas Quibrera highlighted that this year’s Enchilada Fair is promoting a social focus with the “Day of the Garnacha,” where senior citizens, in coordination with the “Nicolás Aguilar” Geriatrics Institute, will participate in an event giving away enchiladas, fostering inclusion and recognition for this sector.

“This effort is part of Mayor Juan Manuel Navarro Muñiz’s vision, who, with the support of Governor Ricardo Gallardo Cardona, is promoting a modern, inclusive fair with a high tourism impact.”

He added that the FENAE (National Enchilada Fair of the State of Mexico) is consolidating its position as the most important cultural and gastronomic event in the region. “It is already a state and national benchmark. Today, the 2026 National Enchilada Fair is not just experienced, it’s savored, sung about, and celebrated in a big way. With an unprecedented lineup that fuses music, tradition, and local talent in a celebration that promises to make history.”
