Art, panoramic views, and good food come together at this Mexico City restaurant. LagoAlgo is a space in the middle of Chapultepec Park, next to Lake Mayor, that not only seeks to create cultural exchange, but also culinary exchange. Together with chef Heriberto Gutiérrez, they seek to bring the world’s best chefs to their kitchen.
For almost two years now, the iconic restaurant on Chapultepec Lake has been promoting culinary exchanges with some of the best restaurants in Mexico and around the world.
LagoAlgo is working hand in hand with the legendary restaurant Alfonsina for this special menu. One of the most visited places in all of Oaxaca, it shares the true essence of Oaxacan flavors.
Chef Heriberto Gutiérrez, together with chef Jorge León, designed a limited-time tasting menu. This restaurant captures the simplicity and authentic flavors of Alfonsina, the restaurant where Elvia León (Jorge’s mother) has become a standard-bearer.
“We strive to bring our cuisine closer to its roots. Now, with Alfonsina’s residency, with chef Jorge León, we’re looking for dishes inspired by Oaxaca by adapting the herbs and vegetables we have, but the whole essence is his,” said chef Heriberto Gutiérrez.
Alfonsina is the fourth residency held at LagoAlgo. It’s an opportunity for chefs from around the world to showcase their cuisine in one of the world’s largest gastronomic cities.
The exchange is not only culinary but also cultural, as both projects focus on reducing environmental impact, responsible food, and artisanal processes.
LagoAlgo is a cultural center that revives one of Mexico’s most important architectural monuments from the 1960s. A space where art and gastronomy come together.
With the “farm-to-table” concept, chef Heriberto Gutiérrez seeks to create a more vegetable-focused cuisine at LagoAlgo, with dishes that are more closely related to the origin and production of their ingredients.
They collaborate with small producers from Xochimilco, Huasca de Ocampo, Teotihuacan, Cuajimalpa, and Chalco, who provide top-quality ingredients to artisan chefs.
Based on a cuisine of origin, focused on the quality of the product, Heriberto Gutiérrez’s cuisine seeks to evoke meeting points that captivate the diverse generations who visit.
Cumin mole is probably the signature dish of the tasting menu.
It’s about memories, recollections, and flavors. LagoAlgo seeks to replicate those moments that many of us have experienced through our childhood cooking.
LagoAlgo will continue with its culinary residencies, where there will be constant exchanges with various chefs who will be taking advantage of their kitchens to share their knowledge:
“The best thing about the residencies is the contribution and experience they share with us and the adaptation we have to create ourselves. But above all, how much it means to them, for example, what it means to make mole.”
How long will Alfonsina’s residency at LagoAlgo last?
Alfonsina’s menu at LagoAlgo will be open until this Sunday, June 1st, a great opportunity for all those who love Oaxacan gastronomy or for those who want to experience Alfonsina’s cuisine and can’t travel to Oaxaca.
The tasting menu will be available for $990 pesos and consists of five dishes with all the essence of Oaxaca.
Pipián tostada with garden herbs and a spicy macha sauce. A simple preparation, but one that stands out for its unique character: “less is more.”
Chickpea, fava bean, and mushroom soup, comforting, almost like a hug from your mom, a true pampering for the heart.
An intense yellow mole tamale filled with tender squash, it stands out for its complex yet delicious flavors.
Cumin mole with fish, to make yourself a taquito. The incredible world of moles, one of Oaxaca’s favorite dishes.
Banana and raspberry ice cream, dairy-free, but just as creamy. This ice cream is made with three different plantains (ripe, green, and Chiapas).
Alfonsina’s tasting menu at LagoAlgo will be available until June 1st, from 8:30 a.m. to 7:00 p.m.
