Salbut Fair 2026 in Mérida: date, venue and what will be offered in San Sebastián

The traditional San Sebastián neighborhood is gearing up to welcome locals and visitors to the fourth annual Salbut Fair, an event that aims to solidify its position as a showcase for Yucatecan cuisine and a gathering place for families.

The event will take place on Sunday, May 17th, at the San Sebastián Market, where a wide variety of this iconic snack will be available from 8:00 a.m. to 8:00 p.m.

The salbut, traditionally prepared with freshly made tortillas, shredded chicken, pickled red onion, tomato, and avocado, will be the star of the show.

However, in addition to the classic recipe, attendees can sample versions with relleno negro (a black filling), castacán (a type of pork stew), picadillo (ground beef), breaded shrimp, and Edam cheese with ground beef, expanding the culinary offerings to suit diverse tastes.

The event will also feature a bazaar with local artisans and entrepreneurs selling products made in the region.

An artistic program is being prepared in parallel to complement the experience, and its lineup will be announced in the coming days.
