The giant tortillas native to Oaxaca, full of flavor and unique tradition, will be the highlight of one of the state’s most important culinary events during Guelaguetza 2026: the Tlayuda Fair in San Antonio de la Cal.
The Tlayuda Fair is more than just a food market. It is a place where visitors can experience the warmth of Oaxaca’s traditional cooks, who bring to life one of the region’s most iconic dishes, now considered an essential part of Oaxaca’s culinary identity.

When Does the Tlayuda Fair Begin and What Other Activities Will Take Place?
In 2026, the fair in San Antonio de la Cal will be held from July 19 to July 27 at the El Polvorín Sports Complex. Activities will begin each day at 9:00 a.m. and continue until 12:00 midnight.
Every year, the fair becomes a celebration of flavors accompanied by performances from local musical groups, creating the perfect setting to experience an authentic Oaxacan festival.

What Makes the Tlayudas of San Antonio de la Cal So Special?
One of the features that makes the tlayudas of San Antonio de la Cal unique is their meticulous preparation process and the quality of their ingredients.
Freshly ground nixtamalized corn and the traditional cooking method on clay griddles are two key factors that give these large tortillas their distinctive flavor.
As a carefully preserved tradition, the cooks of San Antonio de la Cal prepare these giant tortillas almost entirely by hand. Some of them reach up to 40 centimeters (16 inches) in diameter, skillfully handled by the guardians of this culinary tradition.
The ingredients added afterward determine the final flavor of the dish. Whether topped with tasajo (thinly sliced grilled beef), chorizo, pork ribs, cecina (salt-cured beef), tripe, stuffed chilies, or other traditional ingredients, this is where the authentic Oaxacan culinary experience comes to life through an unmatched combination of flavors and seasonings.
