Martha Rocío, originally from Comonfort, remembers that she started in the taco de bolsa business in San Miguel de Allende more than 40 years ago
San Miguel de Allende, Guanajuato.- Tacos are a very unique dish that can be enjoyed in San Miguel De Allende. Martha Rocío Perales has been selling them for years, and although she started offering them on a plate, she opted for the practicality and extra that her clients asked for, since in a bag “the flavors mix better.”
Martha Rocío, originally from Comonfort, remembers that she started in the business more than 40 years ago when she accompanied her mother to offer food to travelers, when the passenger train stopped in the city. Since then, she adopted the taste for selling and offering her seasoning.
The golden tacos filled with potato and beans have always been her star product. They are served four per bag, with lettuce, cream, and the sauce that provides the touch of flavor and is considered the secret ingredient.
“We opted for the bag because it is more practical (…) it serves as a snack and takes away your hunger for a while, we try to put effort into it and prepare them with love,” said Martha Rocío.
The tacos in bags attract the attention of visitors for their peculiar way of serving them, while locals already know that there they can find a delicious snack that, in addition to being tasty, is practical to eat when getting on the truck.
“It is very easy, they eat them on the truck, in one hand their bag and in the other the coca (…) some tie their bag and eat them as if it were a popsicle, they say that this way the flavors mix better,” said the merchant.
The business began as a mobile stand at the bus stops, prior to the construction of the Central Bus Station. Now they have a permanent stand in the plaza in front of the Oratorio temple, a place where several public transport routes stop. It has been there for 15 years, serving Monday through Saturday from 11 a.m. to 5 p.m.
“We are waiting for you here. Here are good, pretty and cheap, your tasty golden taquitos of potato and beans with lettuce, cream and sauce. Whenever you want, we are here.”
