The Christmas turkey is often served marinated in a mixture of dried chili peppers, spices and herbs, which gives it an intense and spicy flavor. Sometimes, it is stuffed with dried fruits, such as raisins and nuts, as well as well-seasoned ground beef, which adds more flavor.

However, this bird can be consumed at any time of the year. In Mexico City there is the “King of Turkey,” a restaurant founded in 1910. According to the establishment’s website, in 1980, Carlos Moreno Avellana, a direct descendant of the founder, opened the establishment that continues to offer service today and has kept his family’s culinary tradition alive for more than a century.

This restaurant, which began its history under the direction of Ramón Avellana Domenjo, has been a pillar in the city’s gastronomic offering, offering recipes that have endured over time.

The history of “El Rey del Pavo” dates back to its beginnings in November 1910, when Domenjo, of Spanish origin, established the business. It was he who introduced the recipes that are still prepared today, such as charcoal-baked turkey, cod, sincronizadas and adobo. These preparations became the basis of the menu that continues to attract generations of diners.

In 1943, the business passed into the hands of Carlos Moreno Labastida, who moved the restaurant to Calle de Palma No. 19. Under his management, the variety of specialties was expanded, consolidating the prestige of the place.

Later, the restaurant moved to Calle de Gante, in a building recognized for its architecture with a Catalan vaulted ceiling.
