The unveiling of the Michelin Guide plaque at a restaurant located along Mérida’s 47th Street gastronomic corridor last Wednesday represents much more than a recognition for a single establishment. It reinforces Yucatán as one of the country’s leading gastronomic destinations and creates new opportunities for the entire restaurant industry value chain, according to Israel López García, president of the National Chamber of the Restaurant and Seasoned Food Industry (CANIRAC) Yucatán.
The business leader emphasized that distinctions like this place the state on the international stage by attracting the attention of travelers, specialists, and food enthusiasts from around the world who seek culinary experiences backed by the prestigious Michelin Guide.
“We are celebrating the unveiling of the Michelin plaque. It makes us very happy because it is both an award and a recognition for everything it represents. It is not only about the quality of the dishes, but also about consistency, high-quality ingredients, and hospitality,” he said.
López García also explained that the impact of this recognition extends beyond the walls of the awarded restaurant, generating positive effects for producers, distributors, suppliers, and other establishments striving to raise their standards and compete at the same level.
For this reason, he noted that the recognition granted to Micaela Mar y Leña encourages the adoption of better practices throughout the sector, from ingredient selection to customer service, thereby strengthening Yucatán’s entire gastronomic ecosystem.
“What this represents is a tremendous benefit for Yucatán. It places us in a showcase visible to the entire world, and I am certain that with this plaque many countries will turn their attention to what is happening in Yucatán because it now has presence and recognition for its restaurants,” he emphasized.
In addition, he pointed out that the presence of Michelin-recognized restaurants also attracts visitors with greater purchasing power, as they tend to stay longer at the destination and spend money at other establishments, markets, and tourist attractions. In other words, these tourists not only dine at the recognized restaurant but also visit traditional kitchens, markets, local eateries, and other local businesses, increasing the economic impact across multiple sectors.
Regarding the possibility of more Yucatán restaurants earning Michelin stars in the future, the president of CANIRAC acknowledged that it is a complex process due to the guide’s strict evaluation criteria and the decisions made by its inspectors.
However, he stressed that any recognition granted by Michelin is a significant achievement for a restaurant, whether it is a plaque or one or more stars.
In this regard, he recalled that Yucatán already has three Michelin-starred restaurants and 15 recognitions within the guide, reflecting the growth and consolidation of Yucatán cuisine on the international stage.
Finally, Israel López García stated that these achievements validate before the world the gastronomic quality that has distinguished the state for years and expressed confidence that more restaurants will continue raising their standards in pursuit of future distinctions.
“We are now on a globally recognized stage. The Michelin Guide is confirming what we already knew: that Yucatán’s gastronomy is one of the best in the country and in the world.”
